Mango Rare Cheesecake---Japanese no-bake cheesecake----

I found this cool recipes in a Japanese website.
Mango rare cheesecake and double chocolate mousse cake.

And I tried them for my friends' (Ta-chan and Nacho) birthday party the other day.

Today, I introduce you this Mango rare cheesecake recipe!!

Mango Rare Cheesecake!!
Ingredient:
   Mango              2 (or canned mango)
   Mango Juice     120ml
Cream cheese   200~250g (I used one package of cream cheese)
   Heavy cream     200ml
   Gelatin               9g (about 2 teaspoon)
   Sugar                65g (about 1/3 cup)
   Lemon Juice      1 tablespoon
   Butter                50g (I used 2-3 tablespoons)
Ritz                   100g (I used about 15 graham crackers)
   Mint (for garnish)

1. In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of spring form pan.
    Chill it in a fridge.

2.Smash mango with a fork.
3.Soften cream cheese in a microwave. And mix the cheese, heavy cream, sugar, and lemon juice into #2 (smashed mango)
4. Add some water into gelatin 6g (about 1 1/4 teaspoons) and warm it up in a microwave and mix it. Mix this and #3. And pour it into #1. Cool it in a Freezer (not fridge) for 15 minutes.
5. Add some water into 3g (about 3/4 teaspoon) gelatin and warm it up in a microwave. Mix it with mango juice and pour it onto #4. Cool it in a Freezer (not fridge) for 10 minutes.
6. Garnish with diced mango and some mint.

They loved it!

As I browsing through other no bake cheese cake recipe in the internet, I found out not many recipes use gelatin.
Other recipes may be easier than this recipe because they may not use as many ingredients as I used in this recipe.
But the mango in the cream cheese concoction was so good (^.^)
You can either smash mango really good in order to get smooth texture, or you can leave small chunks so that you can feel the mango in the mixture.

Please wait for the double chocolate mousse cake recipe~~!!
