Meal Idea: Sausage and Tortellini Soup

We got this huge package of tortellini from the Costco the other day.
And tonight, I used this and made soup.

I loved this soup so much!!
It became one of my favorite dishes!!!


1/4 kielbasa cubed
1/4 onion chopped
1 clove garlic minced
1 1/4 cup beef broth
1/4 cup water
1 large tomato, seeded and chopped
1 small carrot thinly slice or chopped
1/4 cup packed fresh basil leaves
1/8 teaspoon dried oregano
2 oz can tomato sauce
2 oz tortellini pasta


1. Sauté sausages, onions, and garlic in a pot.
2. Add beef broth, water, tomatoes, carrots, basil, oregano, tomato sauce.
Bring to a boil and simmer uncovered for about 30 minutes.
3. Add tortellini and cook it for 10 minutes.















Sprinkle parmesan cheese on top.


And that is it!!

sooo delicious!!

Meal idea: Penne with Eggplant and Basil Pesto

This is our today's lunch dish.
We'd been eating meats whole week, so I just figured it's time to take a break from eating meat.
Penne with Eggplant and Basil Pesto

It's not a vegetarian food since I use Parmesan Cheese, but you can make it without cheese if you are vegetarian.
This was the second time I made pesto; last time I made arugula pesto.
And I truly wished we had a food processor...
I used a cheap blender for making the pesto, and I had to mix it several times to get the blender going.

Here is the recipe.

Ingredients: 2 servings
Penne pasta or whatever short pasta you like for two
1 medium eggplant, cut into cubes
1 packed cup basil
1/8 cup roasted pine nuts
1 clove garlic
1/3 cup extra virgin olive oil
1/4 cup Parmesan cheese grated
Salt and pepper

For the bail pesto:
Put basil, pine nuts, garlic, 1/4 teaspoons salt, and 1/8 teaspoon of black pepper in a blender or food processor, and pulse them together until finely chopped.
Add olive oil while the machine running until pesto is smooth and thick.
Incorporate cheese and season with salt and pepper.

Cook pasta, reserving about 1 cup of pasta water

In a large skillet, cook eggplant with oil stirring occasionally until they turn golden brown. Remove the pan from the heat and cool a bit.
Add the pesto and toss until the eggplant is coated.

Toss eggplant mixture and pasta together until everything is coated with pesto.
Thin out with pasta water, if needed.

Serve it with sprinkle of Parmesan cheese.


My husband and I loved it!
I love basil pesto so this is a perfect dish for me.

Treasure Thursday

This week...

Watermelon!!!

I've been craving for watermelon a lot.
It's like pregnant all over again,
Even though I didn't crave for watermelon as much as I am now....lol

Last night before going to bed, I ate 1/4 of big ball worth of watermelon by myself.
Maybe because it's been really hot out here, in San Diego.

Do you know watermelon is a really good remedy for dehydration?
Well...most of it is water, so you can kinda tell why...right???

We are blessed to get such a great fruit for affordable price.

Wow, did you know there is a knife for cutting watermelon??
I'm kind of curious how it works....

Fun weekend!

My husband and I played in a volleyball tournament with friends last weekend.

I played volleyball in open gyms until I was about 4 month pregnant.
Since then I haven't played until a few weeks ago.
And this was my second tournament in about a year.

First one was a weekend before last weekend.
That weekend was crazier because I just started playing volleyball again a week ago.
My body couldn't react to a ball as fast as it used to do.
It was..still is funny feeling that in my mind I'm moving very fast to the balls but my actual body isn't.....
so I feel like I'm moving awkwardly...

            


Well, we got second, we didn't play with the team who got first and we lost them by points....
It suck to loose without playing against.....

Oh well, 
I had fun.
That's what all about playing volleyball.

Dinner idea: Chicken with Mushrooms and Balsamic Cream Sauce

Today's dinner idea is "Chicken with Mushrooms and Balsamic Cream Sauce" (Recipe courtesy Rachael Ray)

This recipe is easy just like the recipe I blogged about the other day

[Ingredients (4 servings)]
2 tablespoon extra-virgin olive oil
4 boneless, skinless chicken breasts, 6 oz
Pepper
2 tablespoons butter
12 cremini or baby portobello mushrooms, sliced
12 shiitake mushrooms, stems removed and sliced
12 white mushrooms, sliced
2 large cloves garlic, chopped
1 tablespoon thyme leaves, a couple of sprigs, chopped
2 large shallots, thinly sliced
2 tablespoons all-purpose flour
1 1/2 cups chicken stock
1 tablespoon balsamic vinegar 
3 tablespoons heavy cream or half-and-half
1/4 cup chopped flat-leaf parsley

Preheat a large nonstick skillet over medium-high heat and add extra-virgin olive oil. 
Season chicken liberally with salt and pepper and add to the hot skillet. Cook the chicken for 5 to 6 minutes on each side, or until cooked through. Remove the chicken from the pan and cover with foil to keep warm.

Return the skillet to the heat, turn heat back a bit, and add the butter. Once the butter melts add the mushrooms and brown brown stirring occasionally for about 4 to 5 minutes. ***I only used white mushrooms. 
Once the mushrooms are brown, season with salt and pepper then add the garlic, thyme, and shallots. Cook stirring occasionally for about 2 minutes or until the shallots are wilted.
Sprinkle the flour into the pan and cook 2 minutes more. 
Whisk in the stock, balsamic vinegar and the cream. 
Turn the heat up to high and simmer for about 2 minutes or until thickened.


Slice the chicken on an angle. Add the parsley and the chicken back to the skillet to heat up, about 1 minute.

The original recipe uses Orzo as a side dish, but I didn't have it.
So I just used quinoa and made my husband's favorite dish "Herbed Quinoa" ***Recipe courtesy Giada De Laurentiis

Light Delicious Dinner: Grilled Salmon with Citrus Salsa Verde

This recipe is from ,of course, my favorite TV station 'Foodnetwork.com'
And the person who created this recipe is my favorite Giada De Laurentiis.

It's called "Grilled Salmon with Citrus Salsa Verde"
Sooooo easy, light, and delicious!!

Ingredients (4servings)
[Salsa]
2 Large Oranges
1/4 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1/2 cup chopped fresh flat-leaf parsley
2 scallions, finely sliced
3 tablespoons chopped fresh mint leaves
2 tablespoons capers, rinsed, drained and coarsely chopped
2 tablespoons orange zest
1 tablespoon lemon zest
1 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper

[Salmon]
Vegetable or canola oil, for oiling the grill
4 (4 to 5 oz) center cut salmon fillets, skinned, each about 3-inch square
2 tablespoons amber agave nectar
Kosher salt and freshly ground black pepper

And here is the easy recipe :)
1. For the salsa:
   Peel and trim the ends from each orange. Cut along the membrane on both sides of each segment. Free the segments and add them to a medium bowl.
  Add the olive oil, .lemon juice, parsley, scallions, mint, capers, orange zest, lemon zest, and red pepper flakes. Toss lightly and season with salt and pepper, to taste. Set aside.

2. For the salmon:
   Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Brush the grilling rack with vegetable oil to keep the salmon from sticking. 
   Brush the salmon on both sides with the agave nectar and season with salt and pepper to taste (I didn't have agave nectar, so I used honey... still delicious!). 
   Grill until the fish flakes easily and is cooked through, about 3 to 4 minutes on each side. 
   Transfer the salmon to a platter and allow to rest for 5 minutes.

3. Spoon the salsa verde on top of the salmon or serve on the side as an accompaniment.

It's citrusy (is it a word??), light, and yummy!! 
And it's healthy!!

Happy Two Month Old!!

Ken is now TWO-MONTH-OLD!
Time flies!

Here is the Ken when he came home for the first time in his life.
Ken 0 month old.(3-days-old)
He was born with 6 lb 8oz.
The newborn clothes that he was wearing was still big for him.
The waist of the pants was big that they didn't stay....

Now he is two-month-old.

To compare the big difference, I put the same clothes on him.
Look at his big tummy!!
How cute :)  


His legs are too long for this pants that he wears them as if they are low-rise pants....he knows fashion huh? lol

He is now about 12 lb.

If he wears cloth diaper, newborn clothes don't fit anymore.
  (Since I was washing all of cloth diapers, I used disposable one)
How sad...... I loved all of his newborn clothes.......

But my mother-in-law and I got a lot of 3-6 month clothes.
My mother-in-law likes to buy clothes for her little grandson a lot that she got clothe for 12-month..... lol

I got 6 onesies for Ken for cheap from Babiesrus because they were having July 4th Sale.
Good Buy!!

Saturday Breakfast: Mini Frittata

This is today's breakfast.

We were so hungry this morning.
After I fed my baby, I started cooking breakfast.


This is how I cooked carrying Ken.
Because he was wide awake in the morning, whenever he is in the carrier, he will fall asleep just like that.


Any way, the recipe is so easy, but delicious!!
I found it from Foodnetwork.com


    First, whisk together 4 eggs, 1/4 cup of milk, 1/4 teaspoon of freshly ground black pepper, 1/8 teaspoon of salt.


    Second, stir in chopped 4 oz of ham (in my case 2 slices), 2 tablespoons of freshly chopped parsley, 1/6 cup of freshly grated Parmesan cheese.

 
    Then pour into a mini muffin pan, and bake it in the preheated for 400F oven for 8 to 10 minutes, until puffs up.



     Looks like that.
We sprinkled some more of grated Parmesan cheese on top of them.



 They are so yummy!!
    My husband loved it saying these are 5 star-breakfast :)

New materials

I just got these Swarovski crystal settings.



I will make some jewelry with them, even though I have no idea when I can make jewelry next time...

Since I have a almost 2 month baby, I rarely have time to focus on my work, especially in the weekdays.

Hopefully I have time this weekend...
Oh no!
I have a volleyball tournament this weekend..

Well then the weekend after this weekend.
No....
I AGAIN have to play volleyball in a two day tournament......lol

They are getting longer and longer!

Ken was born with long lashes.


And now they are longer than before!!


Every time I look at his eyes, I'm surprised withe length of his lashes.
About 3 weeks-old

Now almost 8 weeks-old

They are so long!
I have relatively long lashes, well at least people say I do, but his might already longer than mine.


Haha. He looks like he has eye lash extension.... :p


Hehehe. He will be handsome :)

Goat Cheese and Sausage Pasta

We went to the Costco and got goat cheese that my husband likes.
So I made a pasta dish.




I just used short pasta that we got also from Costco long ago.


Mix about 4 tablespoons of olive oil, 1-2 tablespoons of lemon zest, and crumbles of goat cheese as much as you want, while sauté sausage (we love  Kielbasa) and onion.


Then mix cooked pasta, goat cheese mixture, sausage and onion in a bowl.
Use pasta water if it is too thick.


Seasons with pepper and squeezed lemon juice.


That's it!!
So easy :)


Goat cheese will melt in the pasta and sausage.
It became creamy~~~!!


My husband likes goat cheese so he sprinkled extra crumbles of goat cheese.


I hope we had some kind of veggies,,,, like asparagus, spinach, or something...


But Still Yummy :::::!
